Throughout the droughty summer, we feared we could not even have the oil for us and our friends! The low late summer rainfalls were enough to save at least half of the normal harvest! But as always, by the law of compensation, for a meager harvest, we had an excellent quality along with an excellent performance between weight of the olives and oil extracted. The olives, while small but very healthy, picked at the right time with the usual traditional systems and immediately taken to the mill, were given a delicious nectar, a bit ‘of freshly baked bread and a pinch of salt is all you need !
